Mexican fast food chain Zambrero has appointed Brett Moore as its new chief operating officer.
Moore is a former COO for Domino’s Australia and Domino’s Japan. He has spent more than 30 years with the pizza chain, including six years as area and state manager, and three years as head of franchising. Moore was also, for 14 years, a multi-unit franchisee with 19 units across New South Wales, Tasmania and New Zealand.
Zambrero’s previous COO, Brad Flinn, takes on the chief development officer role. Flinn has varied franchise experience, including business development at Gloria Jean’s, Oporto and The Coffee Emporium. He joined Zambrero in 2015 as head of leasing and recruitment, and was promoted to general manager.
Flinn then spent four years in operations at Betty’s Burgers before returning to Zambrero in the COO role in 2023.
Leadership appointments set business up for a strong future
Zambrero is part of The Prince Group, which has a diverse portfolio including other hospitality brands, and businesses across healthcare, FMCG, technology, philanthropy and venture.
The Prince Group CEO Guy Hasleshurst has resigned to spend more time with his family. He is replaced by James Bartlett, who brings more than 15 years’ experience at Ernst & Young to the role.
Prince Group and Zambrero founder Dr Sam Prince said he is delighted with the three key leadership appointments.

The leadership appointments follow on from Zambrero’s recent announcement of Daryl McCormack as the brand’s new CEO.
